Good Eats

I have tried/cooked new meals lately and they have turned out great. Thought I would share them with you. The first was at the women's bible study that I am currently in. So I didn't cook the entire meal because we broke up into groups and each did a part to make the meal. I don't know if there is a name for it but it was yummy and very easy! Grill your chicken if you are making for only 2 or 3 people you only need to grill probably 3 chicken breasts. Cook some bow tie pasta. Bake some veggies, its whatever veggies you want. Such as zucchini, onion, mushrooms, squash, bell pepper, etc. Just spray some olive oil, salt and pepper and bake in the oven for about 10-15 min. Add some pesto to your pasta and chop your chicken and add your veggies and there ya go! Simple but sooooo good! 




The next one is Red Beans and Rice. For some reason I have never fixed that since we have been married. Very simple and yummy too! Soak dry red beans overnight then in the morning I put the beans, can of tomato paste, can of tomato sauce and 6 cups of chicken broth  and ham in a crockpot and cooked for 8 hours. I used ham from the deli but you can use a ham hock or sausage in it. Then right before it was time to eat I fixed the rice. I had instant rice so it didn't take long at all. It wasn't spicy (which I don't like spicy foods) but it seemed like it could have had some sort of kick to it so I'm thinking next time I might add a can of rotel or something. But it was really good and Amber has LOVED it! 



Tonight I made an easy yet yummy chicken and broccoli casserole. Boil your chicken then cut into pieces. Steam your broccoli. Then in a casserole dish layer the chicken, broccoli, a can of cream of mushroom that has been mixed with a tablespoon of mayo, cheese and top it with stuffing. Then bake at 350 for about 20 min. I added cheese on top of the whole thing right before it was done just to melt it on top so it wouldn't be too dry. 



Also a great place to eat in town is called Genghis Grill! It is a Mongolian Stir fry place. You get to build your own bowl and then they cook it for you. You choose your protein, they have all kind of meat and seafood, choose your season, choose your veggies, choose your sauce and choose your starch (pasta or rice) It is soooo good and you get a lot for your money!
